The Cape May Salt Oyster is an Atlantic oyster grown in the Delaware Bay along the shores of Cape May County, New Jersey. The salty, succulent flavor of the Cape May Salt has made it a favorite of oyster lovers for centuries. In fact, archeological evidence shows that what we now call a Cape May Salt was first enjoyed by the Native Americans who inhabited the southern New Jersey Delaware Bay Shore.

When European colonists arrived in the 1600s, they too developed an appreciation for this delicacy. Cultivation of Cape May Salts began towards the end of the 19th century. These oysters quickly became the prize of connoisseurs across the country.


Only a stone’s throw to the north of historic downtown Cape May, NJ lies a stretch of intertidal flats on Delaware Bay unlike anywhere else in the Garden State. This unique location is home to the Cape May Salt Oyster farm.

Cape May Salts are grown using the “rack and bag” technique, a method of oyster farming originally developed in France that is perfectly suited for Cape May’s intertidal flats. This growing method keeps our oysters up off the bottom to maximize water flow and food availability, giving Cape May Salts their incredibly plump meat year round. With beautifully white shells and deep cups, these oysters make the perfect addition to any raw bar. It’s no wonder why Cape May Salt Oysters have gained recognition as one of the top oyster varieties in the US.

We are proud to say that The Cape May Salt Oyster has also become a "Slow Food Presidium to maintain a low environmental-impact system of cultivation tried and tested in France.”

Elder Point Oysters

Situated at the mouth of New Jersey’s nationally designated “Wild and Scenic” Maurice River, lies a narrow stretch of pristine saltmarsh affectionately known as Elder Point. This location has seen its share of change over the past three centuries, with everything from trade shops to war forts having stood at Elder Point. A lighthouse once stood on its very banks, guiding a fleet of over 400 sail-powered oyster schooners as they made their way to and from Port Norris with their harvest of Delaware Bay oysters.

Today, our vessels pass by this historic site each day as they make their way to our Elder Point Oyster Farm. This farm lies offshore from the pristine Egg Island WMA, one of the largest and most remote wildlife management areas on the Delaware Bay shore. Our Elder Point Oysters are grown in the deep, high energy waters of middle Delaware Bay using a custom designed oyster farming system specifically suited for this high energy environment. The fierce tides off Cross Ledge Shoal bring an abundance of food and the perfect balance of sweetness and brine to the plump, velvety smooth meats.
